Orange and Chilli Cake

Yes, it’s Study Group Wednesday today. And I’ve been really lax in posting about all the remarkable women we are studying. What can I say, I’m like that only.

I made this Dorie Greenspan cake, which I love, giving it a little twist at the very end!

The cake is a yummy orange and olive oil based cake, with a topping of a sugar syrup simmered with orange zest and chilli padi. A delicious shock factor!

INGREDIENTS:

EVOO and Yogurt Loaf Cake

Makes 12 servings

1 1/2 cups all-purpose flour
2 teaspoons baking powder
Pinch of salt
1 cup sugar
Finely grated zest of 1 orange (or lemon or lime)
1/2 cup plain whole milk yogurt
3 large eggs
1/4 teaspoon pure vanilla extract
1/2 cup evoo (extra-virgin olive oil)

Syrup:
3/4 cup sugar
2/3 cup water
Zest of 1/2 an orange
3-4 chilli padi, slit and deseeded (optional)

Getting ready: Center a rack in the oven and preheat the oven to 350 degrees F. Generously butter an 8″ round tin.
Whisk together the flour, baking powder and salt and keep near by.
Put the sugar and zest in a medium bowl and rub the ingredients together until the sugar is fragrant.
Whisk in the yogurt, eggs and vanilla. When the mixture is well blended, gently whisk in the dry ingredients. Switch to a spatula and fold in the oil. The batter will be thick and shiny. Scrape it into the pan and smooth the top.
Bake the cake for 25 to 35 minutes, or until it is golden and starts to come away from the sides of the pan; a knife inserted into the center of the cake will come out clean.
While the cake is baking, boil the sugar and 2/3 cup water with the zest of the orange and the slit chilli padi. Simmer for 7-8 minutes, then turn off the heat.
When the cake is done, poke holes all over the surface with a skewer, then pour the syrup over the hot cake. Use as much of the syrup as required and store the rest for another day.
Storing: You can keep the cake at room temperature for at least 4 days or freeze it for up to 2 months

Yes, this cake is no beauty, but it makes up in substance what it lacks in style! My Study Group members all loved it much more than any of my decorated cakes.
