This is what I had in my fridge-
A ripe mango
2 slightly squishy avacados
A tiny handful of raspberries
Cut the mango and avacados into cubes. Toss them together with the raspberries.
Add a light dressing of lemon juice and olive oil.
Top with sesame seeds- toasted if you wish!
Enjoy the melding of colours and flavours!
Gosh that looks wonderful – colourful, tasty and healthy.
