I never thought I would post a recipe for a salad. And a salad as simple as this one?

But this one is for the ladies in my Study Group, and for all of you talented, multifaceted women who look for something easy, healthy and delicious to make.

My salad is simple and very quick to put together. No hours of preparation, and ages of time in the kitchen.

Start with a bag of crunchy mixed salad leaves. And a few raw veggies in your fridge.
Here I have celery, cucumber and cherry tomatoes.

Add some sundried tomatoes, pesto-filled peppers and cubed feta. (I found these at the Cold Storage). Throw in some cranberries or grapes for a sweet zing.

Give these a rough chop.
If you choose to pop 3-4 (or more) of the pesto-pepper-perfection directly into your mouth, I’d understand. And won’t judge you.

Toast some nuts- almonds, or walnuts or pecans- in the oven for 7-10 minutes at a low heat or until your kitchen smells fragrant. Chop into large pieces.

Mix together lemon juice and olive oil. Add salt and pepper to taste.

When you are ready to serve the salad, mix together the torn salad leaves, the chopped veggies. Top with sundried tomatoes, pesto-peppers and feta and cranberries or grapes.

Pour over the dressing and mix with a gentle hand.

Serve with an omelette or some focaccia for a light but delightful meal!

  2. Pesto stuffed peppers..what a great idea!!. What kind of peppers did you use? Also is the pesto home made?
