Vegan Chocolate pudding

This is a simple 4 ingredient chocolate pudding recipe. Quick and easy to put together. Great to rustle up for a vegan friend or a dairy allergic child.
A family member had gifted us a lovely dark chocolate with orange – my all time favourite combination. But the chocolate was a bit too bitter to eat out of hand (hey, what do I say? I’m the girl who loves white chocolate).
So this is what I decided to make with it.

The addition of a fifth ingredient, takes it to a different plane, altogether…. But may not be exactly child friendly (unless you are French!)

Ingredients :
1 cup coconut milk
1 100g bar dark chocolate, chopped
4 tbsps granulated sugar
2 tbsps cornstarch
3-4 tsps liqueur of choice (optional)
Method :
Mix cornstarch with 4 tbsps of water into a lump free mixture. Set aside.
In a saucepan, pour in the coconut milk and chopped chocolate.
Bring to a simmer over gentle heat.
Add sugar. Mix until completely dissolved.
Add the cornstarch mixture and bring to a boil. The pudding will thicken very quickly.
Turn off the heat, and allow to cool.
Add in the liqueur, if using it.
Pour into tiny containers and chill.
Enjoy!
